Ah Hai Shi Duck Noodle Soup was established before 1948. Its founder, Mr. Wei Dexing, grew up in poverty, pushing a pushcart and hawking his wares on the streets to support his family. During the 1947 August 7th Flood, he resolved to specialize in Angelica Duck Noodle Soup, meticulously selecting the best duck varieties for optimal texture and developing a balanced Angelica-based herbal formula suitable for all seasons. Paired with handcrafted noodles made using traditional methods, he also devoted great effort to innovating the flavors of small side dishes. These combined efforts earned it a reputation as a local delicacy, recognized as one of the Top 100 Must-Visit Taiwanese Restaurants and a must-visit destination when visiting Tuku.
