Lu Rou Fan Taiwan’s Lu Rou Fan originated as a traditional snack in Zhongpu Township, Chiayi County, at He Mei Market. It carries on the ancestral craft passed down by mothers. The recommended Lu Rou Fan uses premium Taiwanese rice, cooked so each grain stays distinct, springy, and full of bite. It is paired with carefully contract-raised, freshly slaughtered hind-leg pork, slow-simmered for six hours until the translucent fat and silky lean meat reach a perfect 3:7 golden ratio, then finished with a drizzle of pure black-bean soy sauce to create our exclusive, refined meat sauce. This sticky, collagen-rich ragu is ladled over plump, chewy white rice and finally topped with cilantro and our house-pickled cucumbers.
