On Yongzhen Road in Yonghe, near Baoping Road, there is a restaurant named “Hui‧Sushi‧Kappō.” Its singular take on Japanese cuisine turns heads. Manager Shen has worked in Japanese gastronomy for more than a decade. “We don’t restrict ourselves to any one style of Japanese cuisine, so we chose the name ‘Hui,’ meaning ‘to gather,’” he explains. At “Hui,” the menu is not bound by convention; although Japanese techniques and seasonings form the backbone, the kitchen constantly develops creative new dishes and revises the menu according to seasonal ingredients. Guests can enjoy both classic Japanese preparations and novel, delicious innovations.
