Manager Shen has worked in Japanese gastronomy for more than a decade. “We don’t restrict ourselves to any one style of Japanese cuisine, so we chose the name ‘Hui,’ meaning ‘to gather,’” he explains. At “Hui,” the menu is not bound by convention; although Japanese techniques and seasonings form the backbone, the kitchen constantly develops creative new dishes and revises the menu according to seasonal ingredients.
