Their century-egg-and-beef congee looks plain—just a sprinkle of scallion and ginger threads on top, rice grains simmered until shapeless—yet the ingredients lie quietly beneath the snowy porridge. A quick stir releases the savory juices of the velvety beef, and the flavor builds with every spoonful. Instead of the usual youtiao bits, the shop tops the bowl with shards of deep-fried wonton skin; soaked in the broth, they're every bit as satisfying.
