Long ago, Ms. Shen Yunying, the founder, felt that the traditional Chinese cuisine lacked the term "Taiwanese cuisine," which was regrettable. She collected information from various sources, trying to find the characteristics of Taiwanese cuisine. She said, "Taiwanese dishes are skillfully blended from the common dishes of various provinces and regions, selecting the best elements and adding the mild taste of Taiwanese cuisine, so that each dish can reflect the inclusive and rich flavor of the Taiwanese people." Under this understanding, Qingye Restaurant was established. The atmosphere inside the restaurant is warm and cozy, with brown wooden tables and chairs, and yellow lighting, creating a warm and gentle color that highlights the warmth of Qingye Restaurant. The variety of dishes is quite extensive. For example, the signature dishes include home-style dishes such as vegetable egg, braised tofu, sweet and sour pork ribs, oyster omelet, salted shrimp, and braised pork. The restaurant also integrates the strengths of dishes from different regions and constantly changes, such as small fish peanuts, stir-fried four-vegetable mix, jade shrimp roll, oyster roll, and money shrimp cakes, offering more than 200 kinds of dishes. The service at this restaurant is particularly emphasized by Ms. Shen Yunying. She emphasized the strictness and romance of French service, the gentle and elegant manner of Japanese service, the cheerful and straightforward style of American service, and the warm and friendly nature of Chinese service, hoping that every customer can feel at home.
