The "Niu Yiguan" located on Siping Street in Taipei City takes the "Yi" character from the "I Ching" (Book of Changes) as its name, hoping to provide "simple" service and "changeable" service, as well as "unchanging" quality. The beef noodles here come in two types of broth, braised and clear stewed. The broth is made only with basic ingredients such as green onions, ginger, garlic, and special sauce, and is cooked for 4-5 hours with beef bones and beef, concentrating the most delicious flavor. During the cooking process, no alcohol or monosodium glutamate is added, presenting the natural original flavor of the ingredients; the beef used is "Australian beef," which is suitable for long cooking, and is cut by hand to maintain the integrity of the meat; the noodles are specially made by a traditional noodle shop to match the characteristics of the ingredients, with unique chewiness and elasticity; most notably, the owner created the "Taiji Beef Noodles" based on the spirit of the "I Ching," using a Taiji-shaped bowl to serve both the braised and clear stewed flavors at the same time. But don't think that's all, the restaurant also provides "spicy hot" and "curry" flavored sauces. With four different flavors and dry or soup eating methods, it creates the unique "One Noodle Six Ways" signature dish of "Niu Yiguan."
