Tainan Duxiaoyue Noodles, well-known throughout the province. The signature of Duxiaoyue has a history of 104 years. From the generation of Hong Yutou, who received genuine teaching from a master, was good at cooking. At that time, between Tainan and Anping, during the months of April, May, and September, when there were strong winds and heavy rains, it was dangerous to sail, so business was quiet, and it was commonly called "small month." To get through the small month, Hong Yutou set up a noodle stall, which became a special local flavor of the "dangzai noodles," and the store's name came from this. The characteristics of the "dangzai noodles" are small, delicate bowls, and the meat sauce is simmered for years in a century-old pot, maintaining a high temperature for years, with a fragrant and mellow aroma, paired with a rich broth made from sweet shrimp heads. Before serving, the bowls are first heated with hot water, the noodles are briefly blanched, then garnished with bean sprouts and coriander, and served with meat sauce, garlic paste, black vinegar, and shrimp. This becomes a special flavor of "dangzai noodles." Duxiaoyue has opened branches from Tainan to Taipei, allowing friends in Taipei to also enjoy the delicacy. The interior decoration is quite unique, with a two-story building. The upper floor has wooden tables and chairs, mainly for the dining area, like an inn, while the lower floor is arranged as an old-style noodle stall. A white cloth covers the oil noodles and rice noodles, and the vendor takes a handful, puts it in boiling water to blanch, and the empty bowls are lined up in front of the stall. The owner is very fast, putting the noodles and rice noodles into them, pouring the broth and sauce, and adding a shrimp, making a bowl of delicious "dangzai noodles." Customers on the upper floor can watch the chef's skills in person. You can also take photos with the traditional noodle stall, leaving a deep memory. This place is not only about "dangzai noodles," but also has various traditional snacks, such as dishes simmered in a century-old pot, and shrimp meat balls, with prices that are very reasonable. Simple consumption brings great satisfaction.
