At the entrance of Yanping North Road Section 4, "Jinjin Soy Milk" only sells breakfast, which appears unremarkable at first glance, yet it manages to make city dwellers who are used to sleeping in get up early to buy and eat. This is all due to one unique handmade chive egg pancake.
The dough is freshly made, allowing the gluten in the flour to stretch out. The egg is fried to medium doneness, then sprinkled with a generous amount of chive, topped with an egg omelet, folded, drained of oil, and served on a plate. The cut of the pancake is golden brown, with a mix of oil and green, giving it a more appealing appearance than regular egg pancakes. Although it's fried, it isn't greasy. It has a fragrant, savory, and fresh taste, is crispy and mouthwatering, and is delicious enough without needing additional pepper or sweet sauce.
