In the morning, Yan San Night Market returns to its usual quiet daytime appearance. Along Yanping North Road Section 3, except for a convenience store, only this breakfast stall is busily frying rice pancakes, standing out prominently.
The stall is not large, with only two or three small tables. Customers sit closely together, each with a plate of egg pancakes said to be a must-eat. The pancake skin is handmade, much thicker than ordinary rice flour egg pancakes. It is pan-fried on a hot plate until slightly crispy, offering a more substantial texture. Eating it without sauce enhances the aromatic crispness in the mouth.
