Hisun is the only restaurant in Chiayi that specializes in Japanese-style steamed rice, located next to the historic Renwu Temple and adjacent to the popular take-out coffee shop Supiido. The two old houses that have been renovated into shops add new charm to the traditional district. This is a story of opening a restaurant because of falling in love with an old house. Chiayi's Japanese restaurant "Tokyo Sushi" rented the old house due to the need for warehouse space and discovered that it had a history of over 100 years. During the renovation, they fell in love with it more and more, and decided to restore it with the spirit of "preserving the old as the old". Many details were handled by the owner themselves, including transporting tiles from their hometown of Dali and doing some of the woodworking themselves. Although they also sell Japanese cuisine, they have created a clear distinction - Tokyo Sushi is a refined izakaya, positioned as a place to eat and have a drink after work. Hisun, on the other hand, aims to create a sense of "home", starting from the charming small garden, making customers feel like they are going home to eat. Hisun's signature dish is Japanese-style steamed rice, made with Koshihikari rice and cooked from raw rice, which can be paired with grilled dishes, soup, and chilled seasonal vegetables. The indoor dining space is not large, and there is no time limit for meals, hoping that all customers can slowly enjoy their meal and feel the city of Chiayi in a relaxed atmosphere.
