Liao's beef noodle soup, now in its third generation of operation, offers a simple menu without items like half-meat and half-bone found in other places. Clear beef noodle soup and beef broth noodle soup are the main attractions, and it has been sold for more than 45 years. It uses fresh slaughtered Taiwanese beef, and the broth is simmered with beef bones and over 30 kilograms of beef fat, making it fresh, rich, and smooth. There is no soup refilling service here, which needs to be purchased separately. The clear beef noodle soup uses the front leg meat with less fat, and the leg meat, marinated with garlic, is very tender. It is paired with chewy noodles and the essential side dish of pickled vegetables, making it very satisfying to eat. Another highlight of the restaurant is the mushroom meat sauce noodles, where the meat shreds and mushrooms are generously placed, making it especially fragrant when mixed with the noodles. Additionally, the braised dishes such as tofu skin and beef tendon, which are very popular among old customers, are almost a must-order for every table. It would be a pity to miss them.
