Taipei Tang Bing Hang has been in operation for a century. The old shop was founded in 1920. The founder, Li Demei, was trained by the Guangzhou Street Endo Co., Ltd. After the war, Li Demei took over the techniques of the Japanese boss and eventually opened a shop at its current location. Currently, it is managed by the third generation, Li Zhencheng. The main business includes selling gift boxes at the store and wholesale of pastry shells. You can see the most famous "Zuizhong" pastry in various Chinese and Western cuisines, Japanese restaurants, hotels, and pastry shops. Zuizhong pastry originated from a traditional Japanese delicacy. Its outer shell is made of mochi, which is manually baked and then filled with red bean paste. There are many varieties of Zuizhong pastry. In addition to the classic red bean paste without oil, ice cream, and the traditional chrysanthemum and plum-shaped pastry skins, the third-generation boss has developed four new flavors of pastry skins: matcha, strawberry, cocoa, and white. They also created the "Gu Zhi Shi" Zuizhong pastry, which combines almond and pumpkin seeds with mochi pastry skins, making the flavor more diverse and rich. The special feature of Zuizhong pastry lies in the traditional methods still used today. It is still made in a semi-handmade way. The glutinous rice is ground into powder with a stone pestle, then steamed into mochi. After being pounded and cut into pieces, it is placed into baking molds and carefully baked one by one on the oven. In the 1970s and 1980s, many pastry shops ordered products from Taipei Tang, but the fully handmade production could not meet the demand. Therefore, the second-generation boss imported a rotating baking table from Japan, which was powered by gas and automatically heated and rotated. However, the boss still had to personally bend over and place each piece of mochi into the molds to bake them into shape, and then pick out the glutinous rice pastries. The century-old handmade techniques passed down by Taipei Tang are unique, making Zuizhong pastry the most warm and cozy snack.
